Slow Cooker Beef Stew



Ingredients :

2 pounds Stew Meat (or 2 pounds any lean roast cut into 1 inch or so squares)
1/2 cup flour
2 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder
1 teaspoon thyme
cooking oil (about 4 teaspoons)
14 ounce can beef broth
6 ounce can tomato paste
1 1/2 pounds red potatoes quartered or diced (1 inch or so)
1 pound bag baby carrots
1 white onion diced large
2 cups frozen peas

Instructions :

Combine flour, salt, pepper, onion powder, and thyme in a big ziplock bag. Shake, then add the stew meat.
Shake to coat the pieces evenly.
Brown the meat in the cooking oil on all sides, you don't need to cook the meat through. You may need to cook the meat in batches.
Dump the meat into the slow cooker.
Put the pan back on the stove and de-glaze the pan with the beef broth, and tomato paste, scrap up any brown bits of meat and flour into the sauce. This will only take a minute or so.
Add the sauce to the slow cooker.
Add the potatoes, carrots and onions to the slow cooker.
Give everything a big stir.
Cook on low for 7 to 8 hours.
Add peas at the end of cooking time. Put lid back on and cook for 15 more minutes or so, to thaw the peas.

ITALIAN BAKE

Elements :
3 pounds chicken breasts (cooked & cut into bite size pieces)
6 Italian sausage links
2 jars or spaghetti sauce (I use Hunt's in the can - cheaper & just as good!)
1 pound of pasta, penne, macaroni, shells or what ever you like
1 large package of pizza cheese
1 onion
2 large bell peppers - red & green, cut into chunks


Instructions :
Cut up chicken, onion, peppers and sausage.
Boil pasta and drain (don't over cook)
Mix pasta, sausage, onion, peppers, chicken and sauce.
Put in a large deep dish. If it won't all fit, make a little side dish to freeze for lunch later.
Top heavily with cheese.
Bake at 325 degrees for about 45 minutes or until golden and bubbly

Tomato & Cucumber Salad

Elements :


1 large cucumber
3 tomatoes (about 1 lb)
small handful of fresh cilantro, chopped
1 tbsp olive oil
juice from 1/2 lime or more to taste
salt and freshly cracked pepper


Instructions :


Wash and peel the cucumber if it has a lot of wax coating it. Cut into small dice and place into a non reactive bowl.
Wash and dice the tomatoes. Add the tomatoes and chopped cilantro to the bowl as well.
Dribble the olive oil over the salad and start off with a small amount to freshly squeezed lime juice as well as a bit of salt and pepper. Toss the salad and adjust the quantities of lime, salt and pepper until you are happy with the balance and taste.
Allow to the salad to sit for a few minutes or more before serving. This gives the flavours a chance to meld a bit

Top Tuna Casserole


Ingredients :


12 oz (340 g) linguine
4 cups (1 L) Asian or Italian style frozen mixed vegetables
1 can (385 ml) 2% evaporated milk
2/3 cup (150 mL) grated Parmesan cheese
1 tbsp (15 mL) lemon juice
1 large minced garlic clove
1/2 tsp (2 mL) dry mustard
1/2 tsp (2 mL) dried oregano
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
2 cans (each 6 0z/170 g) tuna, drained

Directions :


In large pot of boiling salted water, cook pasta for 7 minutes. Add vegetables; cook until pasta is tender but firm, about 2 minutes. Drain in colander.
In same pot, whisk together milk, cheese, lemon juice, garlic, mustard, oregano, salt and pepper until smooth and hot. Break tuna into chunks; add to pot along with pasta mixture. Stir to coat and heat through.

SALMON AND FETTUCCINE IN A CREAMY LEMON


Ingredients :

Ingredients for 4 persons
- 600g gramme of salmon
- 250g of linguines
-1 brick of liquid cream
-1 c.à soup of double cream
-1 yolk
- zest d ' 1 lemon
- juice d ' 1/2 lemon
- carved chives
- salt and adds pepper to mill


Directions :

Cook pasta as on the indication of the packet. Drain and rinse.

Cut the salmon roughly cubes. In a frying pan, cook the pieces of salmon with lively fire 3 mn on every face. Reserve for heat (in the oven preheat).

In a saucepan, unite both creams, zest of lemon and lead cook in fire very soft counterpart 5mn. Blend the yolk and lemon juice together, and overturn into the saucepan of cream out of fire. Blend deeply. Add chives, salt and pepper.

Raise linguines, deposit cubes of salmon and water with sauce in the lemon!

Cheesy Porcini Meatloaf



Ingredients:

4 Tbsp. extra-virgin olive oil
2 Tbsp. unsalted butter
2 carrots, chopped
2 celery sticks, chopped
1 onion, finely chopped
1/2 oz. dried porcini mushrooms, soaked in 1 cup hot water
2 cloves garlic, minced
2-1/4 cup fresh bread crumbs
1 Tbsp. plus 1/4 cup minced fresh parsley
2 oz. mozzarella shredded plus
6 oz. cut into 1/2" cubes
Salt and freshly ground pepper to taste
2 lbs. ground beef (85% lean)
2 large eggs, lightly beaten
1/2 tsp. minced fresh thyme

Directions:

Preheat oven to 350 degrees F.
Coat bottom of roasting pan with 1 Tbsp. oil

Chop carrots and celery in food processor.
In a saute pan over medium-high heat, add 2 Tbsp. olive oil.
Add the carrots, celery and onion and saute until tender.  Add the mushrooms and garlic and saute for 1 minute.  Let cool.

In a bowl, combine 1-1/2 cups of bread crumbs and the mushroom soaking liquid (be careful pouring in the liquid as there will be some sand at the bottom)

In another bowl, combine the remaining 3/4 cup bread crumbs, 1 Tbsp. parsley, 1 Tbsp. olive oil, shredded cheese and salt and pepper.

In a large bowl, gently mix together the ground beef, soaked bread crumbs, vegetable mixture, eggs, 1/4 cup parsley, thyme and cubed cheese, salt and pepper.  Transfer the mixture to the prepared pan and shape into a 10-by-5 inch loaf.  Cover the top and sides of the meat loaf with the cheese-bread mixture.

Lasagna Roll Ups - Easy and delicious !!!



3 cups chopped cooked chicken
1/4 cup milk
1 cup Ricotta cheese
1/4 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1/8 teaspoon white pepper
8 lasagna noodles, cooked and drained
2 cups Spaghetti Sauce

Directions:
1. In medium bowl, combine chicken, cheeses, milk, and pepper.
2. Spread 1/2 cup mixture on each lasagna noodle; roll jelly-roll fashion.
3. In a 13 by 9-inch baking dish, spread 1 cup spaghetti sauce.
4. Arrange lasagna rolls, seam-side down in sauce in baking dish.
5. Top with remaining spaghetti sauce and cover with foil.
6. Bake at 375 degrees F for 30 minutes or until hot.
7. Serve, if desired, with additional Parmesan cheese.

Braised Beef Salpicao


 
Serves 4 to 5  

Prep Time 15 minutes, 

 plus 3 to 4 hours simmering time  

Cooking Time 10 to 15 minutes


ingredients :


1/2 kilo beef brisket
1/3 cup soy sauce
1/4 cup water
1/2 piece beef broth cube
1 teaspoon sugar
1 tablespoon corn oil or cooking oil
2 tablespoons butter
6 to 8 cloves garlic, thinly sliced
1 small can button mushrooms, halved
1 tablespoon 
Worcestershire sauce (optional)
salt and pepper to taste
parsley, chopped (optional)


preparation :


1  Cut beef into bite-size cubes. Combine soy sauce, water, beef broth cube, and sugar. In a pan, put beef and pour soy sauce mixture. Bring to a boil then transfer to a slow cooker. (Don’t have a slow cooker? An ordinary cooking pot will do. Just increase the water to 1 cup.) Leave it to cook 3 to 4 hours or until tender. Strain meat. Set aside sauce. 


2  In a nonstick skillet, heat corn oil and butter. Sauté garlic until brown. Add meat and mushrooms and sauté for another 2 minutes. 



 Pour in the sauce. Add Worcestershire sauce, season with salt and pepper, and garnish with chopped parsley.

Salisbury Steak Recipe




Salisbury Steak is essentially a beef patty served with a brown sauce. My husband loves his meat and potatoes, so I occasionally make this dish, give the kids the noodles and make him some potatoes.

ingredients : 


Salisbury Steak with Onion Gravy
1 egg
1 can (10-1/2 ounces) condensed French onion soup, undiluted, divided
1/2 cup dry bread crumbs
1/4 teaspoon salt
Pinch pepper
1-1/2 pounds ground beef
1/4 cup water
1/4 cup ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon prepared mustard
1 tablespoon all-purpose flour
2 tablespoons cold water
6 cups hot cooked egg noodles
Chopped fresh parsley, optional

preparation :


1. In a large bowl, beat egg. Stir in 1/3 cup of soup, bread crumbs, salt and pepper. Crumble beef over mixture; mix gently. Shape into six oval patties.
2. In a skillet, brown patties over medium heat for 3-4 minutes on each side. Remove and set aside; drain. Add the water, ketchup, Worcestershire sauce, mustard and remaining soup to skillet. Bring to a boil. Return patties to skillet. Reduce heat; cover and simmer for 15 minutes or until meat is no longer pink. Remove patties. Combine flour and cold water until smooth. Stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve patties and gravy over noodles. Garnish with parsley if desired. Makes 6 servings

Sardines with fraiches tomatoes



A very easy, very quick and very economic recipe. It was needed me just 10 minutes to prepare it, and 30 minutes to cook it. For women (or man) to be pressing, or when (as me) there are a lot of people who arrives unexpectedly. Having served with a green salad, beans it spread with butter or even purée,it will be perfect.

ingredients : 


- 20 sardines (frozen for me, and thaw for opportunity).
- 4 cool tomatoes cut in slim edges.
- The herbes of your choice. (for me it is: Parsley, thyme).
- Salt, pepper, cumin and turmeric.
- oil of olive.
- lemon juice


preparation : 


Put a paper of baking in the bottom of the mould. Dispose sardines and tomatoes in a circle gripped.

In a bowl, put herbes, spices and oil of olive. Definitely blend it and pour fish by top.

Clean off for 20 - 30 minutes in a preheated medium oven.

Savory Ham Wraps Recipe



Ingredients:


4 persons
4 twists of wheat
6 edges of ham
4 carrots
2 tomatoes
8 leaves of salad
4 c. soup of mayonnaise

Preparation:


1- Wash and spin the salad. Pick, wash and rasp carrots. Wash and cut tomatoes in fine edges.

2- Display plain round flat cakes and spread them d ' 1 c. in soup of mayonnaise. Dispose the salad and the ham. Intersperse then rasped carrots and tomatoes.

3- Roll them . You can make them hold with the aid of pikes. Serve.

Basquaise Chicken



Quantity 4 Persons

Level : Easy 

Ingredients :


1 chicken
1 kg of tomatoes
3 pepper
3 onions
3 pods of garlic
6 soup of oil of olive
1 branches of cherry-red tomatoes, some peas of fragrance (facultative)
1 branch of rosemary
salt, 

Preparation :


Cut the chicken in pieces, make them in oil gild.

Peel and cut tomatoes in dices and add them.

Cut add pepper to them in dices, slice thinly onions, hack the garlic and add them.

Add the rosemary, salt, add pepper and cook 45 min in gentle heat.

If you like to give colour in your dish,you can make go back in a frying pan with a little butter,a branch of tomatoes cherries to be left whole and weights of fragrances which you will cut up in small pieces to give colour in your dish.

Serve with the rice.
